I wonder


I wonder about a lot of things.

Like why I can never make eggs over easy. I mean I love scrambled eggs, poached eggs and even hard boiled eggs, and I am good at making them. Generally speaking I am a good cook. Old fashioned beef stews, delicate fish, interesting soups, roasts, chilli, various vegitarian things like lentil shepherd's pie with broccoli spears. (Britneys as a very sweet person who I love calls them.) But even though eggs over easy are one of my favourite quick lunch time snacks, I always find a way to break them and end up with something more like a kind of scrambled omlette.

Is it to do with having the oil hot enough? Or the wrong kind of oil? I have tried butter too, and always use a non-stick pan. I have tried turning them with a fish slice, a bamboo spatular and an angled plastic one. But the yolks just will not stay in one piece.

Also I wonder about peoples handles. I have asked about them before, I am intrigued as to how people choose them, and whether they have an alternative they would use if they ever lost their old one. I'd like to have an alternative profile under the name of Ophelia Cox, but I don't like to be a fake. Anyway I would get lots of awful mail from frustrated guys.

But most of all at the moment I wonder who shygirl772 is. I hope she doesn't stop reading now I have mentioned her. Like if she is really shy. I don't mean any harm. Just curious. She is always there on the recent visitors list, profile always turned off, never leaves a comment. Maybe I should put up one of those private posts in case anyone would only leave an incognito message.

Maybe she is someone I know in real life, who likes to see what I have to say for myself. (Not much at the moment it seems.) Oh well, my guess is that I am doomed to go on wondering.

Anyone else got anything interesting to say today?

I often wonder why I can eat bananas until I start to smell the banana...or why mimes freak me out. Or why I won't eat the deformed-looking baby carrots.

I love hard-boiled eggs - can't really mess those up, now can you?

I use a non-stick pan, cooking spray, and a rubber spatula. It takes a bit of practice, but stick with it, dude.

I think you are on to something here. I always buy organic free range eggs. I don't like my yolks too runny either, (that's why I want to flip them, lol ) and do all the things you say in your (very descriptive) cooking lesson, BUT, I haven't tried the lid on the pan to help the top of the yolk cook off a bit before flipping. That has got to be the answer!

One question though......how the hell do you get the yolk to fall slightly off centre?

I heard somewhere that under-ripe bananas are good for you, and I don't think you are alone in not liking them once they are ripe enough to smell bananary.

As for mimes - me too, especially all the white make-up and gloves. What's that all about?

What is cooking spray? Is that like those oil sprays you can put olive oil in so you get a light, even spray over the salad?

I love my eggs over easy, hell i love eggs almost any way, if it's brekky food i'm IN. lol

When frying i ALWAYS use REAL butter, rather than oil, it just tastes better.

Nothing pisses me off more than breaking the yolk when frying or poaching eggs, but that's pretty rare for me, i'm an expert egg flipper and poacher. LOL

I was, like Amaka, going to suggest a lid, but if you have enough butter in the pan you don't even need to flip the egg to get the over easy thing happening, you can take the easy way out and spoon the melted butter over the egg, in a sense baste it, and all that gross snotty sloppy stuff will cook in the heat of the butter, and still leave you with a nice spreadable yolk.....That's my two bobs worth.

I often wonder about handles myself and have, on more than one occasion asked the same question on my blog. \I love hearing how, and why, people came up with their handles. Some are so clever and often have me cracking up.

I have a few alternatives i'd use if, for some reason, i lost the profile i now have......Until then i will remain ME >>> cum2kissu2

As for shygirl772 i can offer NO insight, i just hope one day she feels sufficiently 'un-shy' enough to say 'Hi'

It depends what kind of helping hand.......

I haven't read the book but I loved the film. I don't see anything wrong with eating unfertilized eggs even if I was a "don't eat animals" type, which I am not. The hen is going to lay them anyway, and they are not going to hatch, so you aren't depriving a potential chicken of it's life. It's a bit tough on the chicken to keep the cockerel away I suppose, but if we can put up with that so can they, lol.

My view on food is that whilst we should avoid cruelty and suffering in farm animals, if you take it down to basic principles, nearly everything which lives feeds on other living things, apart from plants which manage on light and minerals, and worms and things which eat decaying stuff. But we can't, and even if we eat only plants, we are still depriving them of their lives....so where do you draw the line?

I get what you mean about nearly seperating the yolk...I am so dim, why didn't I think of that?! You were spot on - I just crack the sucker and slap it in there!
